We all love a nice collab, especially when Peruvian food is involved. This past Sunday we witnessed the all-stars in the kitchen for Cebiche Gang with Gaston Acurio at La Mar by Gaston Acurio at Mandarin Oriental, Miami. Guests came from all over the city—even travelers from Nicaragua—to experience the unique culinary creations for this Peruvian-style BBQ.

1. Favorite dishes:

Our favorite dish was served in a Chinese takeout box and consisted of Chaufa Fried Rice with Pork Belly. It was tossed in a wok pan with tons of flavor and crunchy toppings. The pork belly was thick and juicy all around. We also really enjoyed the Cebiche Carretillero with flounder, octopus, shrimp, calamari, spicy Leche de Tigre, and a few other garnishes.

2. Takeaway:

The event lives on through Acurio’s cooking school for underprivileged students at the Pachacútec Culinary Institute. Miami kicked off the first stop of a three-city summer charity tour to benefit the school in Peru. It provides classes covering the history of Peruvian cuisine, kitchen techniques, nutrition, and English language. Look for the Cebiche Gang in a city near you.
