We love to see when a pop-up transitions into a full brick and mortar concept and that’s the case for Evil Katsu.

The creators of Evil Katsu (Hai Oliveria, Christopher Wagenlander and Asher Sendyk) met when they worked at Michelin-starred Spanish restaurant, Casa Mono. After long shifts, they would hang out and realized that a shared love for katsu was in the air. And right then and there was the start of their pop-up.

Having lost their jobs due to the pandemic they took a leap of faith and started their pop-up, which soon after became a permanent store-front.

Evil Katsu is an elevated takeout concept in the East Village offering katsu sandos where all proteins are hand butchered and everything is breaded to order. Also on the menu are several sides, salads, snacks, and seasonal dishes that are made from scratch with the exception of kewpie mayo.

We’re ready to eat up this entire menu but if we’d have to start with two dishes it would definitely be the pork katsu sando that is marinated and fried twice with nori kewpie mayo on milk bread, served with a side of house pickles. As well as the egg salad with kewpie mayo, ichimi togarashi, tarragon, and chives.
