Sometimes you just want to stay home and partake in a cooking project. This might be your hobby, your calling but for us its therapy. We have enlisted the help of some of Miami’s most talented chefs to bring you House of Knives, an original series that lives on The Hungry Post IG TV channel and offers you all the steps to re-creating restaurant-quality recipes in your personal kitchen.

In this episode, we’ve teamed up with Chef Santiago Gomez of Cantina la 20 and Tacology to make a Tlayuda, an Oaxacan tortilla-based dish. Chef Santiago Gomez used Black Angus Beef Thick Ribeye Steak from Wild Fork Foods as the star of his plate. This certified USDA Choice Angus rib eye is beautifully marbled, rich, and quick to cook. Chef Santiago recommends you cook it outside in your BBQ grill.

Here’s the recipe:

TLAYUDA
Ingredients

• Black Angus Beef Thick Ribeye Steak from Wild Fork Foods
• Refried black beans
• Oaxaca Cheese
• Radish

Directions

Season the steak with salt and pepper and place it on the grill.  Chef Santiago recommends being generous when applying the salt, specifically when cooking a thick cut of meat. Heat the black beans, spread the black beans on top of the Tlayuda, add the Oaxaca cheese, until it melts, add the thinly sliced rib eye on top of the Tlayuda. Top with the fresh radish and Avocado slices. Serve with the Salsa Molcajeatda (see salsa recipe below).

Salsa Molcajeteada
Ingredients

• Onion
• Tomato’s
• Serrano pepper
• Jalapeño pepper
• Cilantro
• Garlic
• Salt

Directions

Roast all the ingredients . With the help of a molcajete (traditional Mexican cooking stone tool, the one you use to make and present your guacamole) smash all the ingredients. Season with salt. More pepper means more kick, so feel free to add more of the Serrano or jalapeño depending on your heat threshold.
